Ful Medames Two Ways with Yogurt and Tahini

A warm fava bean dish served either plain or with yogurt and tahini, often flavored with garlic, lemon, and herbs.

Ful medames is a common breakfast or mezze dish. The plain version can be vegan, while the yogurt version is not.

Ingredients

  • 1 and a half kilos fava beans
  • 1 tablespoon crushed garlic
  • 1 tablespoon salt
  • 1 cup olive oil
  • 1 cup tahini
  • half a kilo yogurt
  • half a cup fresh lemon juice
  • to taste parsley
  • to taste tomato
  • 1 kilo dried fava beans
  • 1 teaspoon baking soda (sodium bicarbonate)
  • 1 lemon, cut into four pieces with its peel on
  • a little chickpeas
  • a light pinch pepper

Instructions

  1. Soak the dried fava beans in a bowl of water for at least 12 hours.
  2. Change the soaking water in the bowl and wash the fava beans well.
  3. Place the fava beans in a pot over low heat until they begin to boil.
  4. Remove the foam that appears on the surface of the fava beans when they first come to a boil.
  5. Add 1 teaspoon of baking soda (sodium bicarbonate) to the pot of fava beans and stir.
  6. Place the lemon, cut into four pieces with its peel on, on top of the fava beans in the pot to prevent them from darkening.
  7. Leave the fava beans in the pot over low heat until the beans are cooked through.
  8. Heat the boiled fava beans in a pot until they boil and are ready for seasoning.
  9. Transfer a little of the fava bean broth from the pot to a bowl to prepare the seasoning.
  10. Put the garlic, salt, and lemon juice in the seasoning bowl with the fava bean broth, and mix.
  11. Put the hot fava beans in a large bowl, then add the seasoning and toss lightly until the lemon and garlic penetrate the beans.
  12. Put a little olive oil in the bottom of a serving bowl for the plain fava bean dish.
  13. Transfer the fava beans with a little of their broth to the serving bowl for the plain fava bean dish.
  14. Add a little tomato and a little parsley to the serving bowl for the plain fava bean dish, and toss lightly.
  15. Garnish the top of the plain fava bean dish in the bowl with parsley and tomato, then add a little olive oil over it.
  16. Put the garlic, salt, tahini, and lemon juice in a bowl to prepare the yogurt and tahini dressing.
  17. Add the yogurt to the yogurt and tahini dressing bowl, then stir until the consistency is suitable and not too thick.
  18. Put a little fava beans in a mixing bowl, then add the yogurt and tahini mixture and stir.
  19. Put a little of the yogurt and tahini mixture in the bottom of a serving bowl for the second dish.
  20. Transfer the fava beans mixed with yogurt and tahini to the serving bowl for the second dish, over the bottom layer.
  21. Add parsley to the serving bowl for the second dish and toss lightly.
  22. Garnish the top of the second dish in the bowl with parsley and tomato, then add a little tahini and a little oil.
  23. Add a light pinch of pepper to the top of each dish when serving.
