Gaza-Style Fava Beans

This is authentic Gaza-style fava beans: whole fava beans and split fava beans are soaked, then boiled with lemon slices and sodium bicarbonate, mashed, and seasoned with salt, cumin, lemon, and garlic. It is served with tomatoes, parsley, and musabaha (whole chickpeas in tahini sauce) thinned with yogurt, along with pomegranate molasses; the video also mentions Nabulsi olive oil for serving.

A simple fava bean dish in the Gaza style.

Like seasoned stewed fava beans served as a breakfast or light meal.

Cook the beans until very soft and season them generously.

Ingredients

  • 1 kg whole fava beans
  • half a kilo split fava beans
  • 1 lemon lemon slices for boiling
  • 1.5 tsp sodium bicarbonate
  • 1 tbsp salt
  • 1 tbsp cumin
  • juice of 3 lemons lemon juice
  • 15 cloves large garlic cloves
  • half a kilo tomatoes
  • 1 bunch parsley
  • half a glass, 100 ml pomegranate molasses
  • half a kilo smooth chickpeas (musabaha)
  • 200 ml yogurt to thin the musabaha

Instructions

  1. Wash the whole fava beans and split fava beans well in a bowl before boiling.
  2. Soak the fava beans for 24 hours before cooking.
  3. Put the whole fava beans and split fava beans in a pot with the slices of 1 lemon, and cover them with water.
  4. Place the pot over high heat until it begins to boil.
  5. Remove the legume foam from the surface of the pot as it appears.
  6. Add 1.5 tsp sodium bicarbonate to the pot after removing the first foam.
  7. Add the lemon slices to the pot to reduce the darkening of the fava beans.
  8. Lower the heat under the pot and let the fava beans simmer for 40 minutes to 1 hour, depending on the type of fava beans.
  9. In another bowl, prepare the tomatoes, parsley, garlic, lemon juice, salt, cumin, and pomegranate molasses.
  10. Thin the smooth chickpeas (musabaha) with yogurt in a bowl until the color becomes lighter.
  11. Mash the cooked fava beans in their pot, or in a mixer or blender, until they reach the desired Gaza-style fava bean consistency.
  12. Pour the fava beans into a tray or serving dish.
  13. Place the thinned musabaha over the fava beans in the serving tray.
  14. Garnish the serving tray with the tomatoes, parsley, garlic, lemon juice, and pomegranate molasses according to the listed ingredients.
  15. Serve the dish hot.
