
Goat in Oil
Goat meat cooked with oil and spices.
A goat meat dish cooked with oil and seasonings.
Like a simple slow-cooked meat dish served with bread or rice.
Cook the meat until tender so the flavor can develop fully.
Ingredients
- 4 pieces meat
- 250 g carrots
- 300 g potatoes
- 250 g onions
- 1 cup peas
- 60 g or 3 tablespoons butter
- 200 g flour
- 10 cloves garlic
- 3 pieces loomi (dried limes)
- bay leaves bay leaves
- 1 stick cinnamon stick
- 1 tablespoon salt
- 1 teaspoon peppercorns
- 1 teaspoon finely ground black pepper
- half a teaspoon turmeric
- half a teaspoon paprika
- 1 teaspoon ginger
- 6 pieces cloves
- 1 and a half tablespoons safflower
- half a cup olive oil
- rosemary rosemary
- half a cup lemon juice
- a pinch salt
- for frying olive oil
Instructions
- Coat the meat pieces in a bowl with flour and a pinch of salt until covered on all sides.
- Heat the olive oil in a pot over the heat, then fry the flour-coated meat pieces until they take on a suitable color.
- Place the meat pieces in a pressure cooker or regular pot with water over the heat.
- Add the bay leaves, cinnamon stick, peppercorns, 6 cloves, and loomi to the pressure cooker or pot.
- Add the following spices to the pressure cooker or pot: ginger, turmeric, safflower, paprika, black pepper, and salt.
- Cover the pressure cooker or pot and boil the meat until cooked through.
- After the meat is cooked, leave the pressure cooker to cool, or remove the meat from the pot and drain it.
- Melt the butter in a pot over the heat.
- Add the onions to the pot and fry them in the butter until softened.
- Add the potatoes and carrots to the pot and stir until they begin to cook.
- Add the peas to the pot at the final stage of cooking the vegetables.
- Add the rosemary to the pot of vegetables.
- Return the meat pieces to the pot with the vegetables.
- Mix the garlic with the lemon juice in a bowl.
- Add the garlic and lemon juice mixture to the pot at the end.
- Serve the dish hot.
