Homemade Ketchup

This recipe is homemade ketchup made primarily with tomatoes, onion, red bell pepper, garlic, and spices. The ingredients are first simmered in a pot with water, spices, and salt for 45 minutes to 1 hour, then the whole spices are removed and the mixture is blended and strained. The mixture is then returned to the pot, white sugar, brown sugar, and vinegar are added, and it is boiled for about 10 minutes until thickened. Store the ketchup in a sterilized jar that is completely dry.

This is a pantry-style sauce that can be smoother and less sweet than store-bought ketchup. It works well as a table sauce or sandwich spread.

Ingredients

  • 8 medium tomatoes Tomatoes
  • 1 medium onion Onion
  • 1 pepper Red bell pepper
  • 6 cups Water
  • 4 leaves Bay leaves
  • 1 stick Cinnamon stick
  • 5 cloves Garlic
  • 1 tablespoon Whole black peppercorns
  • 5 tablespoons Vinegar
  • 2 tablespoons White sugar
  • 2 tablespoons Brown sugar
  • 1 tablespoon Salt
  • 1 teaspoon Dried coriander

Instructions

  1. Cut the tomatoes, onion, and red bell pepper into pieces on a cutting board.
  2. If desired, place the whole black peppercorns and dried coriander in a piece of cloth or cheesecloth in the prep bowl to make them easier to remove from the pot later.
  3. Break the cinnamon stick before adding it to the prep bowl.
  4. Bring 6 cups of water to a boil in a pot on the stove.
  5. Add the tomatoes, onion, red bell pepper, garlic, bay leaves, cinnamon stick, whole black peppercorns, dried coriander, and salt to the pot on the stove.
  6. Leave the mixture in the pot over low heat for 45 minutes to 1 hour, until the ingredients soften and meld together.
  7. Remove the whole spices from the pot after the initial cooking.
  8. Blend the mixture in a food processor or blender until smooth.
  9. Strain the mixture through a strainer over a bowl until fully strained.
  10. Return the strained mixture to the pot on the stove over low heat.
  11. Add the white sugar, brown sugar, and vinegar to the pot on the stove after returning the strained mixture.
  12. Let the mixture boil in the pot on the stove for about 10 minutes, until it reaches a thicker consistency.
  13. Pour the ketchup into a sterilized jar that is completely dry once it is ready.
  14. Let the ketchup cool after bottling or before serving.
