Pizza Sauce

A Syrian-style pizza sauce made with boiled, peeled, then blended tomatoes, with onion, garlic, tomato paste, olive oil, white vinegar, salt, sugar, white pepper, oregano, and fresh thyme. Basil is added at the end after the sauce has cooled slightly. The recipe cooks over low heat until thickened, then is stored in an airtight container with a layer of oil on top.

Cook the sauce until it is thick enough to stay on the dough.

Ingredients

  • 1 kg tomatoes
  • 1.5 tablespoons tomato paste
  • 2 medium onions
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 8 garlic cloves
  • half a teaspoon white pepper
  • 1 tablespoon oregano
  • 1 cup olive oil
  • 2 tablespoons white vinegar
  • 1 small bunch basil
  • 1 small bunch fresh thyme
  • 1 teaspoon pepper
  • 5 tomatoes
  • 2 medium onions
  • 7-8 fresh garlic cloves

Instructions

  1. Score the tops of the tomatoes with an X, then boil them in a pot of boiling water for 3 minutes to make peeling easier.
  2. Peel the tomatoes after boiling them in the pot, then remove the skins.
  3. Finely chop the onions.
  4. Cut the tomatoes into suitable pieces, then place them in a food processor and blend until smooth.
  5. Pour the olive oil into a pot over the heat, then add the onions while the oil is still cold.
  6. Add the salt and white pepper to the pot, then stir the mixture.
  7. Add the garlic to the pot, then add the tomato paste to the pot.
  8. Add the sugar and white vinegar to the pot, then reduce the heat and leave the mixture to simmer.
  9. Add the blended tomatoes to the pot, then raise the heat slightly and leave the mixture to thicken over low heat for about 10 minutes.
  10. Add the oregano and fresh thyme to the pot at the final stage of cooking.
  11. Finely chop the basil on a cutting board, then add it to the pot after the sauce has cooled slightly.
  12. Pour the sauce into an airtight jar or container, then pour the oil on the surface over it for storage.
