Islak Burger

A Turkish-style burger served on soft buns soaked in sauce.

A Turkish-style wet burger served with sauce and soft buns.

Like a saucy steamed burger sandwich.

The buns are usually soaked or steamed with sauce, so serve them warm.

Ingredients

  • 600 g finely minced meat
  • 1 finely chopped onion
  • 2 large garlic cloves
  • 1 egg
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1/2 cup 70 g breadcrumbs
  • 5 tbsp olive oil
  • 2 tbsp tomato paste or pepper paste
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp oregano
  • 5 large tomatoes
  • 2 tbsp ketchup
  • 600 g lean lamb meat
  • 50 g fat
  • a pinch salt for the onion and garlic
  • for serving pickled peppers

Instructions

  1. Place the minced meat in a mixing bowl.
  2. Add the finely chopped onion to the mixing bowl over the meat.
  3. Add the garlic to the mixing bowl over the meat and onion.
  4. Add the egg to the mixing bowl.
  5. Add the salt, pepper, and cumin to the mixing bowl.
  6. Add the breadcrumbs to the mixing bowl.
  7. Knead the ingredients well in the mixing bowl until combined.
  8. Cover the mixing bowl and let the meat rest for one or two hours.
  9. Heat the olive oil in a pot over the heat.
  10. Sauté the tomato paste in the pot with the olive oil.
  11. Add the garlic to the pot with the tomato paste.
  12. Add the salt, pepper, and oregano to the pot.
  13. Add the tomatoes to the pot and leave over the heat until the sauce thickens.
  14. Add the ketchup to the pot and stir the sauce until complete.
  15. Shape the meat into balls or patties in a bowl or by hand.
  16. Fry the burger patties in a frying pan with a little oil until browned and cooked through.
