
Islak Burger
A Turkish-style burger served on soft buns soaked in sauce.
A Turkish-style wet burger served with sauce and soft buns.
Like a saucy steamed burger sandwich.
The buns are usually soaked or steamed with sauce, so serve them warm.
Ingredients
- 600 g finely minced meat
- 1 finely chopped onion
- 2 large garlic cloves
- 1 egg
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
- 1/2 cup 70 g breadcrumbs
- 5 tbsp olive oil
- 2 tbsp tomato paste or pepper paste
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 5 large tomatoes
- 2 tbsp ketchup
- 600 g lean lamb meat
- 50 g fat
- a pinch salt for the onion and garlic
- for serving pickled peppers
Instructions
- Place the minced meat in a mixing bowl.
- Add the finely chopped onion to the mixing bowl over the meat.
- Add the garlic to the mixing bowl over the meat and onion.
- Add the egg to the mixing bowl.
- Add the salt, pepper, and cumin to the mixing bowl.
- Add the breadcrumbs to the mixing bowl.
- Knead the ingredients well in the mixing bowl until combined.
- Cover the mixing bowl and let the meat rest for one or two hours.
- Heat the olive oil in a pot over the heat.
- Sauté the tomato paste in the pot with the olive oil.
- Add the garlic to the pot with the tomato paste.
- Add the salt, pepper, and oregano to the pot.
- Add the tomatoes to the pot and leave over the heat until the sauce thickens.
- Add the ketchup to the pot and stir the sauce until complete.
- Shape the meat into balls or patties in a bowl or by hand.
- Fry the burger patties in a frying pan with a little oil until browned and cooked through.
