Lemon and Orange Juice for Freezing

This is a concentrated citrus juice recipe for freezing, based mainly on 500 g lemon, 200 g orange, and 700 g sugar, with optional fresh mint. The fruit is washed well, very thinly peeled with the white pith and seeds removed, then rubbed with the sugar and blended well. It is then strained and frozen in an airtight container. When serving, dilute with cold water and serve chilled.

A citrus juice mixture prepared for storage in the freezer.

Strain the juice before freezing if you want a smoother result.

Ingredients

  • 500 g lemon
  • 200 g orange
  • 700 g sugar
  • optional fresh mint

Instructions

  1. Wash the lemons and oranges well with a scrubber.
  2. Peel the lemons and oranges very thinly, removing all the inner white pith so that no bitter taste remains.
  3. Rub the peels with part of the sugar in a bowl until their aromatic oils are released.
  4. Remove the seeds and the inner white pith from the lemons and oranges completely during preparation.
  5. Juice or blend the lemons and oranges with the sugar in an electric blender for about 4 minutes, until the mixture is smooth.
  6. Strain the mixture through a sieve, then return the remaining pulp to the blender with a little water to rinse it and make use of it.
  7. Pour the juice into a freezer-safe container, bowl, or bag, then cover tightly and place in the freezer for 4 to 5 hours or overnight.
  8. If desired, make a mint version by adding sprigs of mint to the mixture, then strain it into a freezer-safe container, cover it, and place it in the freezer.
