A Turkish breakfast dish made with eggs and tomatoes.

A Turkish-style egg and tomato breakfast dish.

Like a soft scrambled egg skillet with tomatoes and peppers.

This is usually cooked quickly in one pan and served hot.

Ingredients

  • 8 pieces peeled local tomatoes
  • 2 pieces large onion
  • 2 pieces red bell pepper
  • 2 pieces green bell pepper
  • 6 eggs eggs
  • ghee
  • a pinch salt
  • a pinch black pepper
  • a pinch paprika
  • to taste Kashkaval cheese
  • 1 spoonful red pepper paste

Instructions

  1. In a frying pan, heat the ghee, vegetable oil, olive oil, or butter.
  2. In the frying pan, add the finely chopped onion with a pinch of salt and stir until softened.
  3. In the frying pan, add the finely chopped red and green bell peppers and stir them with the onion.
  4. In the frying pan, add the peeled, roughly chopped tomatoes.
  5. In the frying pan, add a pinch of black pepper and a pinch of paprika, and stir the ingredients together.
  6. In the frying pan, cover the surface with parchment paper if you want to trap the steam and prevent the ingredients from splattering.
  7. In the frying pan, add the beaten eggs over the tomato and vegetable mixture and spread them across the pan.
  8. In the frying pan, let the eggs cook over low heat until the ingredients set and dry slightly.
  9. In the frying pan, add Kashkaval cheese to taste.
  10. In the frying pan, turn off the heat and let the cheese melt from the residual heat of the pan.
  11. In the frying pan, serve the dish hot with hot, toasted bread.
