Oven-Grilled Chicken Wings

This recipe consists of chicken wings with potatoes and onions, seasoned with garlic, whole lemon with its peel, olive oil, salt, dried coriander, sumac, ginger, pepper paste, and pomegranate molasses. They are then arranged in an oven tray with the potatoes and onions on the bottom and the wings on top. The oven tray is covered with damp parchment paper and baked at 250°C for 25 to 30 minutes, then uncovered for the final 10 minutes so the wings brown and the potatoes roast.

Bake until the skin browns and the chicken is fully cooked through.

Ingredients

  • Less than 1 kilogram, about 800 g Chicken wings
  • Potatoes
  • 3 medium onions Onions
  • 4 cloves Garlic
  • 1 lemon Lemon with peel
  • Olive oil
  • About 1 tablespoon, or 1/2 tablespoon Salt
  • Dried coriander
  • 1 tablespoon Sumac
  • A pinch Ginger
  • 1 heaped teaspoon Pepper paste
  • 4 tablespoons Pomegranate molasses
  • For soaking with salt Vinegar

Instructions

  1. Soak the chicken wings in vinegar and salt in a bowl before preparing the recipe.
  2. Grate 3 medium onions into the mixing bowl.
  3. Prepare 4 cloves of garlic for the recipe.
  4. Add 1 lemon with its peel to the mixing bowl, then remove the lemon later before baking in the oven tray so it does not make the dish bitter.
  5. Add the potatoes to the mixing bowl; small or large potatoes may be used.
  6. Add the olive oil to the mixing bowl.
  7. Add salt to the mixing bowl, about 1 tablespoon or 1/2 tablespoon.
  8. Add the dried coriander to the mixing bowl.
  9. Add 1 tablespoon of sumac to the mixing bowl.
  10. Add a pinch of ginger to the mixing bowl.
  11. Add 1 heaped teaspoon of pepper paste to the mixing bowl.
  12. Add 4 tablespoons of pomegranate molasses to the mixing bowl.
  13. Rub all the ingredients together in the mixing bowl until combined.
  14. Cut the potatoes into the desired shape before arranging them in the oven tray.
  15. Arrange the potatoes and onions on the bottom of the oven tray.
  16. Lay the chicken wings over the potatoes and onions in the oven tray.
  17. Wet the parchment paper with water, then cover the oven tray with it to retain moisture.
  18. Seal the oven tray well before putting it in the oven.
  19. Bake the oven tray in a preheated oven at 250°C, with heat from above and below.
  20. Turn on the oven fan, if available.
  21. Leave the oven tray covered in the oven for about 25 to 30 minutes.
  22. Uncover the oven tray for the final 10 minutes in the oven, until the top browns and the potatoes roast.
