
Red Pepper Molasses
A concentrated, thick paste made from red peppers.
A thick pepper paste or molasses made from red peppers.
Like a spicy pepper paste.
Cook down the peppers until the mixture becomes thick and spreadable.
Ingredients
- 5 kilograms red peppers
- 5 tablespoons salt
- three-quarters of a cup white vinegar
- a little olive oil
Instructions
- Clean the red peppers in a bowl or on a work surface, removing the seeds and ribs before starting.
- Grind the peppers in a grinder or with a blade until coarsely chopped like makdous, then gather them in the tray.
- Place the chopped peppers in the tray or on a baking tray, then leave them in the sun if the heat is strong, or use the oven as shown in the video.
- Set the oven to its highest temperature with both top and bottom heat, and place the tray on the oven floor until the peppers dry out and cook, stirring from time to time.
- Once the peppers are ready, transfer them to a suitable bowl or pot, then add the white vinegar and salt and mix the ingredients.
- Fill the pepper molasses into a jar or preserve jar, then add a little olive oil on top and seal it while hot.
