Steamed Grilled Chicken Thighs

This recipe is for chicken drumsticks marinated in yogurt, garlic, vinegar, oil, and spices, then cooked in a pan on the stove using a steam-trapping method, with initial browning over high heat followed by steaming until done. Carrots and broccoli are optional, and the total time is about 40 minutes after marinating for at least 2 hours.

Cook the chicken through gently with steam, then finish it so the surface gets color.

Ingredients

  • 8 Chicken drumsticks
  • optional Carrots
  • optional Broccoli
  • 1/2 teaspoon Ground ginger
  • 1 teaspoon Oregano
  • 1 tablespoon Pepper paste
  • 1/2 teaspoon Ground cardamom
  • 1/2 teaspoon White pepper
  • 1 tablespoon Maggi seasoning
  • 1 1/2 tablespoons Yogurt
  • 6 cloves Garlic
  • 2 tablespoons White vinegar
  • 2 tablespoons Olive oil
  • apple cider vinegar or grape vinegar Alternative vinegar if white vinegar is unavailable
  • 2 cubes Maggi cubes instead of Maggi seasoning if it is unavailable
  • a drizzle Pomegranate molasses for serving

Instructions

  1. In a bowl, combine the yogurt, garlic, white vinegar, and olive oil with the oregano, pepper paste, ground cardamom, white pepper, Maggi seasoning, and ground ginger.
  2. In a baking tray or suitable pan on the stove, make two small slits in each chicken drumstick so the marinade reaches the inside.
  3. In the bowl, coat the chicken drumsticks with the marinade, then cover and leave for at least 2 hours.
  4. In the pan, place parchment paper, then arrange the marinated chicken drumsticks on top.
  5. In the pan, cover the chicken tightly with cellophane, then place the lid on top to trap the steam.
  6. In the pan over high heat, cook the chicken for 5 minutes.
  7. In the pan, turn the chicken drumsticks after 5 minutes.
  8. In the pan, add the carrots and broccoli if desired, then cover again.
  9. In the steaming pan, continue cooking for about 15 minutes.
  10. On a serving platter, serve the chicken hot; a drizzle of pomegranate molasses may be added.
