
Tamarind Drink
A sweet-and-sour drink made from tamarind.
A tart-sweet beverage made from tamarind.
Like a tangy fruit drink.
Ingredients
- half a kilo Tamarind
- 3 litres Water
- a quarter cup Orange blossom water
- 300 grams Sugar
- 1½ litres Water
Instructions
- Soak the tamarind in a bowl with 1½ litres of water for 24 hours; preferably, soak it the day before.
- If preparing it on the same day, boil the tamarind in a pot with the water, then continue with the remaining steps.
- Rub the tamarind with your hands in the bowl with the water to break it apart and extract its essence.
- Strain the tamarind mixture through a sieve into another bowl.
- Squeeze the remaining tamarind in the sieve with your hands, then rinse it with some water from the remaining quantity to extract as much essence as possible.
- Dissolve the sugar in half a litre of the remaining water in a separate bowl.
- Add the sugar water to the strained tamarind mixture in the bowl.
- Strain the mixture a second time into another bowl using a finer sieve to remove impurities.
- Add the orange blossom water to the bowl, then mix the drink well.
- Serve the tamarind drink cold.
