
Turkish Kumpir with Toppings
A large baked potato, split open and filled with cheese, pickles, corn, olives, sauces, and other savory toppings.

Kumpir is usually served hot and assembled with many toppings. This version is rich and includes dairy and processed meats.
Ingredients
- as needed large potatoes
- as needed mozzarella cheese
- as needed mixed bell peppers
- as needed pickled cucumbers
- as needed pickled peppers
- as needed corn
- as needed butter
- as needed mortadella
- as needed olives
- as needed mayonnaise
- as needed ketchup
- a pinch salt
- a pinch oregano
- a pinch black pepper
- as needed plastic wrap
Instructions
- Wash and clean the large potatoes thoroughly, keeping them whole.
- Put butter on the potatoes.
- Wrap each potato in parchment paper, then in plastic wrap.
- Place the wrapped potatoes in the oven at 250 for about 1 hour.
- Open the plastic wrap around the potatoes in the oven after 45 minutes.
- Move the potatoes to the upper rack of the oven and turn on top heat only for the final 15 minutes, until they develop a browned exterior.
- Remove the potatoes from the oven while hot.
- Carefully slit the hot potato and open it as much as possible.
- Remove part of the potato flesh from inside the opened potato.
- Add butter and a pinch of salt to the potato flesh inside the potato.
- Stir the potato flesh with the butter and salt inside the potato until combined.
- Add mozzarella cheese to the hot potato.
- Fold the cheese into the potato inside the potato, from the bottom upward, until it melts from the heat.
- Add a pinch of black pepper and a pinch of oregano to the potato.
- Gently stir the ingredients inside the potato.
- Add the mixed bell peppers to the potato.
- Add the pickled cucumbers to the potato.
- Add the pickled peppers to the potato.
- Add the mortadella to the potato.
- Add the corn to the potato.
- Add the olives to the potato.
- Add ketchup and mayonnaise over the top of the potato.
- Serve the potato after filling it and adding the toppings.
