Batata harra means spicy potatoes. Cut the potatoes evenly so they cook at the same rate, and add lemon near the end for freshness.

Ingredients

  • 1300 g potatoes
  • 1 teaspoon red pepper paste
  • ½ teaspoon black pepper
  • ½ teaspoon dried coriander
  • listed without a quantity salt
  • listed without a quantity garlic
  • 1 lemon juice of 1 lemon
  • listed without a quantity olive oil
  • 1 bunch fresh coriander bunch
  • a little white vinegar
  • 2 tablespoons cornstarch

Instructions

  1. Peel the potatoes, then cut them into small cubes or thick slices of similar size.
  2. Wash the potatoes in a bowl until the water runs clear, then add a little white vinegar and leave to soak for 10 minutes.
  3. Drain the potatoes after soaking, then dry them thoroughly by hand or with a cloth until no water remains on them.
  4. Add 2 tablespoons of cornstarch to the potatoes in a bowl and toss until the pieces are coated.
  5. Fry the potatoes in a pan or deep-frying pot directly in oil until golden and crisp.
  6. Heat a little olive oil in a pan, then add the garlic and sauté briefly without over-browning it.
  7. Add the red pepper paste to the pan along with the fried potatoes, then add the salt, black pepper, and dried coriander, and toss the ingredients together.
  8. Add the lemon juice to the pan, then immediately add the fresh coriander and toss only twice.
  9. Transfer the spicy potatoes to a serving dish and serve hot.
