
Baked Potato Omelet with Vegetables
This is a baked potato tray dish with vegetables and eggs: the potatoes are grated and soaked in cold water, then the carrot is grated and the green onions and garlic are prepared. The eggs are mixed with yogurt, oil, seasonings, and flour until the mixture comes together. Ingredients
- 2 pieces Potatoes
- 2 pieces Tomatoes
- 1 piece Carrot
- 3 pieces Green onions

- 1 cup Flour

Instructions
- In a bowl, grate the potatoes after peeling them.
- In a bowl, soak the grated potatoes in cold water for 15 to 20 minutes, preferably 20 to 25 minutes.
- In another bowl, grate the carrot.
- On a cutting board, split the green onions lengthwise if they are thick; leave them whole if they are thin.
- In a mixing bowl, add the eggs, yogurt, olive oil, salt, black pepper, oregano, crushed garlic, and green onions, then mix the ingredients.
- In the same mixing bowl, gradually add the flour until the mixture comes together.
- In the same mixing bowl, add the parsley, reserving some for garnish.
- In a colander, drain the potatoes of the cold water after soaking.
- In the same mixing bowl, add the potatoes and carrot to the mixture, then mix until the consistency is medium, neither liquid nor stiff.
- In an oven tray greased with olive oil, spread out the mixture and distribute it in an even layer.
- In the oven, bake the tray at 200 degrees with top and bottom heat on until the dish is cooked through.
- In the oven, move the tray to the lower rack during the first bake.
- In the oven, remove the tray once cooked and arrange tomato slices over the top.
- In the oven, add mozzarella cheese over the tomato slices, then return the tray to the oven with top heat only until the cheese melts.
- On a serving board, serve the dish hot after the cheese has melted.
