Artichokes with Meat

This is Syrian-style artichokes with meat: the artichokes are fried first, then the meat is cooked with onions, carrots, and peas. A tomato sauce is prepared with garlic, ginger, seven-spice blend, and black pepper. The ingredients are then arranged in a Pyrex baking dish and briefly baked until set, and served hot with fried pine nuts.

Ingredients

  • 15 pieces Artichokes
  • 700 g Lamb or beef
  • 2 pieces Medium onions
  • 2 cups Peas
  • 500 g Chopped carrots
  • 1 kg Tomatoes
  • 2 tablespoons Tomato paste
  • 2 tablespoons Ghee
  • 5 cloves Garlic
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Seven-spice blend
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Salt
  • Fried pine nuts for garnish Fried pine nuts for garnish

Instructions

  1. Clean the artichokes and prepare them in a suitable bowl before frying.
  2. Fry the artichokes in a pan with ghee or oil until golden, then transfer them to paper towels.
  3. Put the 2 tablespoons of ghee in a pot, then add the chopped onions and sauté with a pinch of salt.
  4. Add the meat to the pot and stir it with the onions until half cooked.
  5. Add the chopped carrots to the pot with the meat, stir, then cover the pot.
  6. Add the peas to the pot and stir with the remaining ingredients, keeping their green color.
  7. Prepare the sauce in another pot by adding the tomatoes with a pinch of salt, tomato paste, ginger, seven-spice blend, black pepper, and garlic.
  8. Bring the sauce to a boil in the pot until it thickens.
  9. Pour the sauce into the Pyrex baking dish.
  10. Arrange the artichokes over the sauce in the Pyrex baking dish.
  11. Spread the meat, peas, and carrot mixture over the artichokes in the Pyrex baking dish.
  12. Place the Pyrex baking dish in the oven with bottom heat for no more than 10 minutes, until the food binds with the sauce.
  13. Garnish the dish with fried pine nuts when serving.
