
Cauliflower Crust Pizza
This is a pizza recipe with a cauliflower base instead of flour. The cauliflower is grated and mixed with mozzarella cheese, an egg, and a pinch of salt to form a dough, then spread in a pan and baked first at high heat until set. It is then topped with pizza sauce, cheese, bell peppers, mushrooms, and olives, and broiled until the cheese melts and the top browns.

Ingredients
- 1 cup 120 g Grated cauliflower
- 1 cup Grated mozzarella cheese
- 1 Egg

Instructions
- Grate the cauliflower on the coarse side of a grater, leaving out the stem and not grating it.
- In a bowl, mix the grated cauliflower with the mozzarella cheese, egg, and a pinch of salt until a cohesive dough forms.
- Preheat the oven to 250 and turn on both the top and bottom heat.
- Spread the cauliflower dough in a pizza pan lined with parchment paper or in a Pyrex dish, depending on what is available.
- Place the pan in the oven on the lower rack for about 10 minutes, until the dough takes on color underneath.
- Move the pan higher in the oven and lightly brown the top until the dough firms up and sets.
- Let the dough cool slightly after removing it from the oven.
- Spread the pizza sauce over the surface of the dough.
- Distribute the cheese over the sauce.
- Place the mixed-color bell peppers, mushrooms, and olives on top.
- Return the pizza to the oven on the upper rack for about 5 minutes, until the cheese melts and the top takes on color.
