  • 1 tablespoon ketchup

Instructions

  1. In a pot over the heat, mix the mayonnaise with the ketchup, mustard, and hot chili sauce to make the burger sauce.
  2. In a pot over the heat, add the chopped onion with a piece of butter, a pinch of salt, and a little water to make the caramelized onion.
  3. In a bowl, prepare the meat mixture using 70% veal, 30% lamb meat, 25% lamb fat, a pinch of salt, and a pinch of pepper.
  4. Over the charcoal, shape the meat into a thick patty and place it directly on the grill grate.
  5. Over the charcoal, sprinkle the meat with salt and pepper while it cooks.
  6. Over the charcoal, leave the patty until it is seared on both sides, about 2 to 3 minutes per side.
  7. Over the charcoal, toast the bread.
  8. Over the charcoal or at the assembly station, place a slice of Cheddar and a slice of mozzarella over the meat until melted.
  9. On the toasted bread, add the burger sauce, then the caramelized onion, then the pickles, then the lettuce, then the tomato, then the cheese-topped patty.
  10. On the other piece of bread, add the burger sauce, then close the burger and serve hot.
