
Chicken Cutlets with Lemon and Garlic
Meat cutlets cooked with a lemon and garlic marinade.
Pan-cooked chicken cutlets with a lemon and garlic seasoning.
Like simple lemon-garlic chicken schnitzel.
Best cooked over medium heat so the cutlets stay juicy.
Ingredients
- 1 kilo Lamb or beef cutlets
- half a kilo Half-fried potatoes
- half a kilo Onions
- 300 grams Mushrooms
- 1 cup Meat stock
- 1 cup Lemon juice
- 1 1/2 cups Flour
- half a cup Olive oil
- 100 g Butter
- 7 cloves or to taste Garlic
- 1/2 teaspoon Ground red pepper
- 1/2 teaspoon Ginger
- 1/2 teaspoon Mixed spices
- 1 teaspoon Black pepper
- 1 teaspoon Dried coriander
- to taste Salt
- a little Apple cider vinegar
Instructions
- Pound the meat on a work surface until each piece is thin so it cooks quickly.
- Mix the spices in a bowl: dried coriander, black pepper, mixed spices, ginger, ground red pepper, and salt.
- Place the meat cutlets in a bowl, sprinkle them with some of the spice mixture, then mix well so the spices are distributed over all the pieces.
- Lightly coat the meat cutlets with flour.
- Heat a frying pan over high heat, then add the butter and olive oil.
- Fry the meat cutlets in the hot pan until nicely browned, then remove them from the pan.
- Fry the mushrooms in a pan with butter and olive oil, then set aside.
- Fry the onions in a pan with butter until softened.
- Add the mushrooms to the onions in the pan and sprinkle them with some of the spice mixture.
- Prepare the sauce in a pan by adding the butter, then the flour, stirring until the flour is lightly toasted.
- Add the meat stock to the sauce in the pan, then add the remaining spices; stir the sauce and reduce the heat until it is ready.
- Arrange the potatoes over the bottom of the baking tray.
- Arrange the meat cutlets over the potatoes in the baking tray.
- Distribute the onions and mushrooms over the meat cutlets in the baking tray.
- Pour the sauce over the ingredients in the baking tray so the liquids run down to the potatoes at the bottom.
- Place the baking tray in the oven on the top rack.
- Turn on the top heat only until the tray takes on a grilled flavor.
- After removing the baking tray from the oven, add the garlic and lemon juice to the tray at the end.
