Digestive Biscuits

Simple tea biscuits made in the style of digestive biscuits.

Like a plain wholemeal cookie.

Roll the dough evenly so the biscuits bake at the same rate.

Ingredients

  • 1¼ cups (110 g) Oats
  • 1 cup (110 g) Whole wheat flour
  • ½ cup Brown sugar
  • 1 Egg
  • 1 tablespoon Liquid or powdered vanilla
  • ½ cup (85 g) Butter
  • ¼ teaspoon Baking soda
  • ¼ teaspoon Salt

Instructions

  1. Preheat the oven to 170°C with top and bottom heat before starting.
  2. Beat the egg in a bowl.
  3. Add the oats, whole wheat flour, brown sugar, vanilla, cold butter, baking soda, and salt to the bowl.
  4. Mix the ingredients until a cohesive dough forms that is neither soft nor dry.
  5. Refrigerate the dough for 10 minutes.
  6. Roll out the dough between two sheets of parchment paper until it is of even thickness.
  7. Cut the dough with a round cutter the size of the biscuits.
  8. Gather the remaining scraps and knead them again.
  9. Prick the biscuit pieces with a fork to give them the digestive-biscuit look.
  10. Arrange the biscuit pieces on a baking tray.
  11. Place the tray in the oven at 170°C until cooked through and golden.
