
Eid Cookies Without Sugar
Eid cookies or biscuits made without added sugar.
A healthy, economical cookie or sweet biscuit made for Eid without added sugar.
Like festive holiday cookies with a lighter sweetener-free style.
Ingredients
- 4 cups or 500 g flour
- 1/2 tsp salt
- 1 tbsp sugar
- 1 tsp mahlab
- 1 tsp fennel
- 1 tbsp sesame seeds
- 1 tbsp nigella seeds
- 1 tbsp prepared green za’atar
- a pinch baking powder
- a pinch instant yeast
- 120 g, 3/4 cup ghee
- 100 g, 1/2 cup olive oil
- 200 ml cheese water
- 3 pieces, to enhance the flavor white cheese
- oil spray oil spray
Instructions
- Preheat the oven to a very high temperature, 250 to 300°C, before starting to bake.
- Place the flour, salt, sugar, sesame seeds, nigella seeds, mahlab, fennel, prepared green za’atar, a pinch of baking powder, and a pinch of instant yeast in a large mixing bowl, then stir the dry ingredients together.
- Add the ghee and olive oil to the mixing bowl, then rub the ingredients together in the bowl until the fats are distributed through the flour.
- Place the cheese water and white cheese in a blender, then blend until thick and concentrated in cheese flavor.
- Add the blended cheese water and cheese mixture to the mixing bowl gradually for those who do not have the same type of flour or the same moisture level in their ingredients, then bring the dough together until it reaches a crumbly, non-elastic consistency.
- Cover the dough in the mixing bowl and leave it to rest for several minutes.
- Take small pieces of dough by hand, then roll and lengthen them by hand into finger shapes or thin pieces.
- Arrange the dough pieces on a baking tray, with no mention of using parchment paper or greasing the tray.
- Bake the tray in the oven on approximately the second rack from the top and at the highest temperature for 3 to 4 minutes, until the pieces take on a good color and become dry.
- Remove the tray from the oven while hot, then immediately move the pieces around in the tray so they do not stick.
- After removing the pieces from the oven, spray them with oil spray to bring out the olive oil flavor.
- Leave the pieces until completely cool, then serve or store them.
