Original Lemonade

This is a chilled Syrian lemonade made with 4 lemons, 1 orange, sugar, and water. Some of the thin outer peel is zested, while the white pith and seeds are removed. The fruit is then steeped with sugar, strained with water, and frozen. Part of the liquid is blended with the frozen lemonade cubes to create a thick, icy texture.

A simple lemon drink made from the original-style recipe in the title.

Like classic fresh lemonade.

Ingredients

  • 4 lemons (approximately 800 g) lemons
  • 1 orange orange
  • 300 g (1½ cups) sugar
  • 1½ liters (7.5 cups) water
  • reserved for the next stage ½ liter water

Instructions

  1. In a bowl, zest only the thin outer peel from 3½ lemons, and zest only the peel from half an orange into the same bowl, avoiding the white pith.
  2. Leave half a lemon and half an orange with their peel on in the prep bowl for later use.
  3. On a cutting board or using a knife, completely peel the remaining lemon and orange, removing all of the white pith and seeds.
  4. On a cutting board, cut the peeled lemon and orange into small pieces.
  5. On a cutting board, cut the reserved half lemon and half orange, with their peel on, into pieces, removing any seeds if present.
  6. Place all the lemon and orange pieces in a mixing bowl, then add the lemon and orange zest.
  7. Sprinkle the sugar over the fruit and zest in the mixing bowl.
  8. Leave the mixture in the mixing bowl for half an hour.
  9. Transfer to a smaller bowl, or leave it in a suitable bowl, then strain the mixture through a strainer while pressing the contents; pass the same pieces over the strainer again in the bowl to make use of them.
  10. Add the water to the bowl gradually, in batches, while straining and pressing, until the full 1½ liters of water have been used.
  11. Transfer the strained liquid to a tray or freezer-safe container.
  12. Cover the tray or freezer container, then place it in the freezer until frozen.
  13. Keep ½ liter of the resulting juice in a bowl or bottle for the next stage, as mentioned by the chef.
  14. Take the frozen lemonade out of the freezer, then cut it into cubes on a cutting board.
  15. Stir the juice that was set aside in a bowl or pitcher.
  16. Place approximately ½ cup of the reserved juice in a blender, then add some of the frozen lemonade cubes.
  17. Add a little juice over the cubes in the blender as needed to help with blending.
  18. Blend until the consistency becomes frozen and thick, like lemonade.
  19. Serve the lemonade cold in serving glasses.
