Pan-fried pastries without oven or yeast

Quick plain or filled pastries cooked in a pan instead of the oven.

Simple stuffed or plain pastries cooked in a pan instead of baked.

Like skillet flatbreads or quick stuffed turnovers.

Ingredients

  • 5 cups / 500 grams flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp yogurt
  • 1 1/2 cups / 300 ml water
  • 1 tbsp oil
  • 4 tbsp oil
  • 1 medium onion
  • 1 tbsp pepper paste
  • 1/3 tsp black pepper
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 500 grams tomatoes
  • 1 tsp nigella seeds
  • 1 tsp sesame seeds
  • 200 grams white cheese
  • 200 grams shillal cheese or halloumi
  • 1 handful parsley
  • 1 tbsp ghee
  • 3 eggs
  • a pinch salt
  • 1/4 tsp white pepper
  • 1/2 tsp dried chili pepper
  • mentioned without a quantity za'atar
  • mentioned without a quantity olive oil

Instructions

  1. In a dough bowl, mix the flour with the salt and sugar.
  2. In the dough bowl, add the yogurt, then the water, then the oil, and knead until an elastic dough forms.
  3. In the dough bowl, brush the surface of the dough with oil, then cover the bowl and let the dough rest in a warm, dark place.
  4. In a pan, heat 4 tablespoons of oil over medium heat.
  5. In the pan, add the chopped onion and sauté until softened.
  6. In the pan, add the pepper paste, then the salt, black pepper, cumin, coriander, and paprika, and stir.
  7. In the pan, add the tomatoes and let the muhammara filling cook down until it reaches a consistency suitable for pastries.
  8. In a small bowl, add the nigella seeds and sesame seeds to the muhammara filling, then set the filling aside.
  9. In a cheese bowl, mash the white cheese with the shillal cheese or halloumi.
  10. In the cheese bowl, add the parsley, ghee, eggs, salt, white pepper, dried chili pepper, nigella seeds, and sesame seeds, then mix.
  11. On the work surface, roll out the dough into equal circles.
  12. In the pan, fill the rounds with the muhammara filling, the cheese filling, or za'atar with olive oil.
  13. In the pan, cook the pastries over medium heat with the pan covered until the inside is cooked through and the surface turns golden.
  14. In the pan, turn the pastries as needed until cooking is complete.
