Keket el-Zanqat is a quick Syrian cake for unexpected guests, made with 4 eggs and a cup each of sugar, milk, yogurt, and oil, along with flour, baking powder, and baking soda. Ingredients

  • 4 Eggs
  • cup Milk
  • cup Yogurt
  • cup Sugar
  • cup Vegetable oil
  • 3 1/2 Flour
  • tsp Vanilla or any flavoring
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • to taste Sesame seeds or any nuts
  • as needed Butter for greasing the pan
  • as needed Flour for dusting the pan
  • a little Orange flavoring
  • a little Lemon flavoring

Instructions

  1. Preheat the oven to 180°C with both top and bottom heat before beginning preparation.
  2. Grease a 30 cm Pyrex dish with butter.
  3. Dust flour inside the butter-greased Pyrex dish, then move the dish around until the interior surface is coated to prevent sticking.
  4. Place 4 eggs and a cup of sugar in a mixing bowl.
  5. Add a cup of vegetable oil, a cup of milk, and a cup of yogurt to the mixing bowl.
  6. Add vanilla or any flavoring to the mixing bowl; the chef mentioned that orange or lemon flavoring can be used.
  7. Beat the cake mixture in the mixing bowl with an electric mixer until it doubles in volume.
  8. Place 3 1/2 cups of flour with the baking powder and baking soda in a bowl.
  9. Whisk or mix the flour with the baking powder and baking soda in the bowl until the dry ingredients are distributed.
  10. Add the flour mixture to the cake mixture in the mixing bowl, then continue mixing until the consistency is as shown in the video.
  11. Pour the cake mixture into the Pyrex dish.
  12. Move the Pyrex dish slightly so that the bubbles rise to the surface.
  13. Sprinkle sesame seeds or any nuts over the top of the cake mixture in the Pyrex dish.
  14. Place the Pyrex dish in the oven on the middle rack, slightly toward the bottom.
  15. Bake the cake in the oven for 40 minutes.
  16. Do not open the oven door during the first 40 minutes of baking the cake.
  17. Remove the Pyrex dish from the oven once baked, then let the cake rest briefly before slicing.
  18. Slice the cake and serve.
