Soft Homemade Manakish Dough

A soft homemade manakish dough recipe made with flour, yeast, sugar, warm water, salt, yogurt, and oil. The dough is kneaded well and left to rise briefly, then shaped into rounds and filled with a mixture of salty full-fat white cheese, parsley, sesame, nigella seeds, and eggs. It is baked quickly in a very hot oven and removed from the tray immediately to keep it soft.

A dough or bread preparation for making soft manakish at home.

Like soft Middle Eastern flatbread dough.

Ingredients

  • 4 cups (400 g) flour
  • 10 g dry yeast
  • 10 g (1 and a half teaspoons) sugar
  • 1 cup warm water
  • half a teaspoon salt
  • 2 tablespoons yogurt
  • 1 tablespoon oil
  • 300 g salty full-fat white cheese
  • a little chopped parsley
  • a little sesame seeds
  • a little nigella seeds
  • a pinch salt
  • a pinch white pepper
  • 3 eggs eggs

Instructions

  1. In a large mixing bowl, combine 4 cups of flour with 10 g dry yeast, 10 g sugar, and half a teaspoon of salt.
  2. In the same bowl, add 2 tablespoons of yogurt, 1 cup of warm water, and 1 tablespoon of oil, then begin bringing the dough together.
  3. In the same bowl, knead the dough well for 10 to 15 minutes, until it becomes elastic and the gluten develops.
  4. In the same bowl, leave the dough to rest until doubled in size, for about 15 minutes.
  5. On a flour-dusted surface or inside a flour-dusted Pyrex dish, deflate the dough and divide it into similarly sized rounds.
  6. On the same work surface, flatten each round with your hand until round, then place it on a baking tray.
  7. In another mixing bowl, combine 300 g salty full-fat white cheese with a little chopped parsley, a little sesame seeds, a little nigella seeds, a pinch of salt, a pinch of white pepper, and 3 eggs.
  8. On each dough round, place a spoonful of filling or a suitable amount of filling, then close the round.
  9. On the same baking tray, leave the prepared rounds to rest for 2 minutes before putting them in the oven.
  10. In a preheated oven, bake the manakish on high heat from above and below for only 3 minutes.
  11. After removing them from the oven, immediately transfer the manakish from the hot tray to a serving plate so the dough does not dry out.
