Sultan's Bite

A Middle Eastern dessert known as Luqmat al-Sultan (Sultan’s Bite).

A sweet dessert or pastry called Sultan's Bite.

Like a small syrupy Middle Eastern sweet.

Ingredients

  • 1 liter full-fat liquid milk
  • 1 cup [100 g] powdered milk
  • 50 g [¼ cup] sugar
  • 1 teaspoon ground cardamom
  • 1 teaspoon baking powder
  • 1 egg, at room temperature
  • 1 teaspoon flour
  • 1 teaspoon medium semolina
  • 1 tablespoon vegetable oil
  • 5 tablespoons orange blossom water
  • a little Aleppo pistachios, for garnish
  • may be added instead of orange blossom water rose water
  • added when serving honey or sugar syrup

Instructions

  1. In a pot over medium heat, bring the full-fat liquid milk to a gentle boil with the sugar and cardamom, stirring until it begins to simmer lightly.
  2. In a bowl, combine the dry ingredients: powdered milk, semolina, flour, and baking powder, until evenly mixed.
  3. In the same bowl, add the vegetable oil and mix it into the dry ingredients until the mixture resembles sand.
  4. In the same bowl, add the egg gradually, mixing until a soft, shapeable dough forms.
  5. Shape the dough into small pieces and arrange them in a wide pot so that the pieces do not overlap.
  6. Turn the pieces in the pot once, then cover the pot and leave the pieces with the milk over low heat for about 10 minutes.
  7. After 10 minutes, transfer the pieces from the pot to a serving dish.
  8. Add the orange blossom water to the milk in the pot and leave over low heat for 2 more minutes.
  9. Pour the scented milk over the pieces in the serving dish.
  10. Cover the serving dish with kitchen plastic wrap, then place it in the refrigerator overnight.
  11. Serve the dessert cold; it can be garnished with Aleppo pistachios or served with honey or sugar syrup.
