
Turkish Poğaça Buns
Soft Turkish stuffed pastries, often served for breakfast or as a snack.

Ingredients
- 550 g (5 cups) flour
- 250 g (1 block) butter
- 1 tbsp (1 packet, 11 g) dry yeast
- 1 tbsp sugar
- 1 tsp salt
- 2 eggs eggs
- 1 cup (200 ml) water

Instructions
- In a mixing bowl, combine the warm water with the sugar and dry yeast until the mixture dissolves.
- In another bowl, combine the flour and salt.
- Add the butter to the flour and rub them together until the flour absorbs the butter well.
- Separate the eggs, then add the egg whites to the flour and yeast mixture, reserving the yolks to brush the tops later.
- Add the water-and-yeast mixture to the mixing bowl, then knead into a soft, sticky dough without over-kneading.
- If the dough seems too runny, add a little flour in the mixing bowl until it firms up slightly.
- Cover the dough with a clean cotton cloth and leave it in a warm place for 20 minutes.
- On a floured table or work surface, divide the dough into pieces and shape them into balls.
- Cover the dough balls and leave them to rest for another 15 to 20 minutes.
- Roll out or shape each piece according to the type of filling on the preparation tray.
- Fill some pieces with kaşar cheese, some with white cheese and parsley, and some with olives.
- Seal the dough pieces well, then place them on the baking tray.
- Preheat the oven to 200°C for half an hour.
- Mix the egg yolks with a little white vinegar, then brush the tops of the pieces on the baking tray.
- Sprinkle sesame seeds and nigella seeds over the pieces according to the type of filling, as mentioned in the video.
- Place the baking tray in the oven at 200°C, using top and bottom heat, positioned more toward the lower middle than the upper part of the oven.
