
Cheese Sauce for Fried Potatoes
A hot, creamy cheese sauce for fried potatoes, made with butter, flour, milk, and cream along with mozzarella and cheddar, and seasoned with black pepper, turmeric, salt, and mustard. It is prepared over low heat, taking care not to cook the cheese for too long after adding it, and served immediately over the potatoes with parsley or green onion for garnish.

Like a cheesy gravy or a nacho-style sauce.
Keep the heat gentle so the cheese stays smooth and does not separate. It should be thick, creamy, and easy to spoon.
Ingredients
- Mozzarella cheese
- Cheddar cheese
- Parsley for garnish
- 2 tablespoons Butter
- 1 tablespoon Flour
- 1/4 teaspoon Black pepper
- 1/4 teaspoon Turmeric
- 1/2 teaspoon Salt
- 1 teaspoon Mustard
- 1 cup Milk
- 1/2 cup Cooking cream
- a little Green onion for garnish
- a little Water
- about 1/4 cup Additional milk
- a little Pressed falafel or jalapeño
- a little Fried potatoes
Instructions
- Place a pot over low heat on the stove and add the butter to the pot.
- Add the flour to the pot before the butter has fully melted, and stir immediately in the pot over low heat so that the mixture does not become lumpy.
- Add the cooking cream, then add the milk to the pot and stir the mixture in the pot.
- Raise the heat slightly under the pot until the mixture warms through and thickens slightly.
- Add the black pepper, turmeric, salt, and mustard to the pot over low heat.
- Add a little milk, about 1/4 cup of milk, and a little water to the pot if needed, until the sauce has a slightly thinner consistency before adding the cheese.
- Add the cheddar cheese and mozzarella cheese to the pot.
- Stir the cheese in the pot only until it warms and melts; do not cook it for too long in the pot after adding the cheese so that the sauce does not separate.
- Pour the hot cheese sauce over the fried potatoes when serving.
- Garnish the dish with parsley or green onion, and a little pressed falafel or jalapeño may be added when serving.
