Ingredients
- 1 kilo Chicken wings
- 1 cup Potato starch
- 1 tablespoon Red pepper paste
- 1 teaspoon Black pepper
- 1 teaspoon Ground cardamom
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Paprika
- 1.5 tablespoons Salt
- 1 tablespoon Soy sauce
- 50 grams Butter
- 1 piece Onion
- 1 piece Ginger
- 1/4 cup Honey or sugar
- optional Hot chili sauce
- 3 tablespoons White vinegar
- 1/4 cup Brown sugar
- 1/4 cup Regular sugar
- for frying Oil
- a little Hot water
Instructions
- In a bowl, mix together the spices listed in the description.
- In the same bowl, add some of the spices to the potato starch and mix well.
- In the same bowl, coat the wings in the seasoned potato starch until fully covered.
- Heat the oil in a frying pan, then fry the wings in batches until crisp and cooked through.
- Place the fried wings on a plate lined with kitchen paper to drain the oil, then continue frying the remaining quantity in the pan.
- Finely chop the onion as the chef explained, then grate the ginger.
- Melt the butter in a frying pan, then add the onion and ginger and sauté until the onion softens.
- Add some of the pre-mixed spices to the pan, then add the red pepper paste and stir.
- Add hot water to the pan, then add the soy sauce and honey or sugar, and stir until the sauce thickens.
- Add the hot chili sauce to the pan, if desired.
- Add the fried wings to the sauce and toss until fully coated.
- Arrange the sauce-coated wings on a baking tray set over an oven rack.
- Turn on the top oven grill for 5 minutes, until the surface dries.
