Escalope

The basic recipe is chicken escalope coated in flour, egg, and breadcrumbs, with a seasoning blend of Maggi vegetable seasoning, ginger, paprika, oregano, garlic powder, onion powder, and vinegar. Ingredients

  • 2 breasts Chicken breasts
  • 1 cup Flour
  • 1 cup Breadcrumbs [fine ka'ak or toasted, ground sandwich bread]
  • 2 Eggs
  • 2 tablespoons Vinegar
  • 1 tablespoon Maggi vegetable seasoning
  • 1 teaspoon Ginger
  • 1 teaspoon Paprika [dried pepper]
  • 1 teaspoon Oregano [wild thyme]
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • optional White pepper
  • not added Salt
  • hot and clean Oil
  • a little Mayonnaise
  • a little Potatoes
  • a little Pomegranate molasses
  • broccoli, cauliflower, mushrooms, onion, asparagus, carrots, tomatoes, green beans Boiled vegetables
  • a little Butter
  • available Mozzarella

Instructions

  1. In a bowl, mix together the seasoning-blend ingredients: onion powder, Maggi seasoning, garlic powder, oregano, ginger, and paprika.
  2. On a cutting board, slice each chicken breast horizontally from the side to make it thinner and of an even thickness.
  3. On the cutting board, cover the chicken breast with plastic wrap, then pound it until thin without crushing it.
  4. Sprinkle the mixed seasonings over both sides of the chicken breast.
  5. In a bowl, whisk the eggs with 1 teaspoon of the mixed seasonings and the vinegar.
  6. In a wide plate, place the flour and add 1 1/2 tablespoons of the mixed seasonings.
  7. In another wide plate, place the breadcrumbs and add 1 1/2 tablespoons of the mixed seasonings.
  8. Coat the chicken breast first in the flour.
  9. Dip the chicken breast in the beaten egg.
  10. Coat the chicken breast in the breadcrumbs.
  11. In a frying pan, heat the oil until it is hot and clean.
  12. Place the chicken breast in the pan and leave it until it sets, then turn it after about seven minutes.
  13. Remove the escalope from the pan and place it on the serving plate.
  14. Optionally, serve the escalope with mayonnaise and potatoes.
  15. Optionally, serve the escalope with boiled vegetables.
  16. If desired, place the boiled vegetables in a frying pan with the butter.
  17. On the serving plate, add the mozzarella on top, then place the plate in the oven under the top heat until the cheese melts, for about three minutes.
