Lamb Hearts with Lemon and Garlic

Ingredients

  • lamb hearts
  • 8 cloves garlic
  • 2 lemons lemon
  • mushrooms
  • 2 medium onions onion
  • 2 green onions green onions
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons ghee
  • vinegar
  • you can use butter butter
  • you can add any spices you prefer spices

Instructions

  1. Wash the lamb hearts with water, salt, and vinegar in a washing bowl, as mentioned by the chef.
  2. Clean the lamb hearts on a cutting board by removing the tough inner parts and any unwanted excess fat.
  3. Cut the lamb hearts on a cutting board into medium pieces, as the chef mentioned that they should not be large or very small.
  4. Roughly chop the onions on a cutting board.
  5. Cut the mushrooms on a cutting board in the same way described for the onions.
  6. Slice part of the garlic on a cutting board.
  7. Cut the green onions on a cutting board; they are optional according to the chef.
  8. Place 2 tablespoons of ghee in a frying pan over the heat.
  9. Add the onions to the frying pan over the heat, then add the salt and black pepper to the pan.
  10. When the onions soften slightly in the frying pan over the heat, add the sliced garlic to the pan.
  11. Add the mushrooms to the frying pan over the heat after the onions and garlic.
  12. Add the green onions to the frying pan at the end of this stage so they do not darken and retain their green color.
  13. Transfer the onion, mushroom, garlic, and green onion mixture from the frying pan to a bowl once it is ready.
  14. Place the lamb hearts in the same frying pan over the heat without adding fat, because the chef mentioned that their fat is sufficient for frying them.
  15. Cover the lamb hearts in the frying pan over the heat so they cook faster.
  16. After the lamb hearts are cooked in the frying pan over the heat, return the onion, mushroom, garlic, and green onion mixture to them in the pan.
  17. Lower the heat under the frying pan when mixing the hearts with the mixture.
  18. Squeeze the lemons into a small bowl and crush the garlic in a small bowl, then mix them together.
  19. Add the lemon and crushed garlic mixture to the frying pan over the heat at the very end.
  20. Give the ingredients a light stir in the frying pan over the heat; the dish is then ready to serve hot.
