This is a quick, professional-style beef steak cooked in a very hot pan, seasoned simply with salt and pepper, then finished with butter, garlic, and fresh thyme or rosemary. The meat is rested before serving and served with a creamy spinach and cheese sauce and seasoned roasted potatoes.

Ingredients

  • 400 g beef steak
  • salt
  • pepper
  • 100 g butter
  • 2 garlic cloves
  • fresh thyme or rosemary
  • 1 small onion
  • 2 bunches of spinach
  • 1/4 tsp salt
  • a pinch pepper
  • a pinch dried pepper
  • 1/4 cup cream
  • 2 pieces Cheddar or Kashkaval cheese
  • 1/2 kg small potatoes
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp curry powder
  • 1/4 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 cup olive oil
  • 1 spray oil

Instructions

  1. Heat the pan over high heat until it is very hot before adding the steak.
  2. Take the beef steak out of the refrigerator and leave it at room temperature for at least 30 minutes.
  3. If moisture appears on the meat, pat the steak dry with kitchen paper before seasoning.
  4. Season both sides of the steak with salt and coarse pepper before placing it in the pan.
  5. Spray the hot pan once with oil.
  6. Place the steak in the pan and leave it undisturbed until it develops color underneath.
  7. Turn the steak over in the pan and leave it until the second side develops color.
  8. Add 100 g butter, 2 garlic cloves, and fresh thyme or rosemary to the pan.
  9. Move the steak around the pan with the butter, garlic, and herbs until the butter caramelizes and the meat takes on the flavor.
  10. Cook the steak until it reaches a medium doneness level according to the touch test mentioned in the instructions, then turn off the heat.
  11. Remove the steak from the pan and let it rest on a plate for at least 5 minutes.
  12. Prepare the spinach in the pan: add 1 finely chopped small onion with a little olive oil.
  13. Add 2 bunches of spinach to the pan with the onion.
  14. Season the spinach in the pan with 1/4 tsp salt, a pinch of pepper, and a pinch of dried pepper.
  15. Add 1/4 cup cream to the pan with the spinach.
  16. Add 2 pieces of Cheddar or Kashkaval cheese to the pan with the spinach until the sauce forms.
  17. Serve the steak hot with the spinach sauce and potatoes.
