Syrian Eid Petit Fours

Luxurious Syrian Eid petit fours made with a butter, powdered sugar, egg yolk, vanilla, all-purpose flour, a pinch of salt, and sodium bicarbonate dough. The dough is divided into two portions, cocoa is added to one portion, then the cookies are shaped and baked at 190°C for 10 to 12 minutes, turning them after about 5 minutes. Once cooled, they are filled with jam, chocolate, or finely chopped nuts and sandwiched together.

Small Syrian Eid cookies or petit fours, likely a festive baked sweet.

Like delicate bite-sized celebration cookies.

These are usually made in small shapes and baked until lightly golden.

Ingredients

  • 250 grams Butter
  • 100 grams Powdered sugar
  • 1 sachet of vanilla or 1 tbsp liquid vanilla Vanilla
  • 2 Egg yolks
  • a pinch Salt
  • 300 grams All-purpose flour
  • may be added in place of the same quantity of flour Cocoa
  • 1/2 tsp Sodium bicarbonate
  • any type Jam
  • 100 grams Chocolate
  • any type Finely chopped nuts
  • mentioned as a possible substitute Vegetable shortening
  • 1 tsp Animal ghee
  • 2 tsp Unsweetened cocoa powder
  • 1/2 cup Regular sweetened cocoa
  • a small drop Vegetable oil
  • apricot jam for the filling Apricot
  • strawberry jam for the filling Strawberry

Instructions

  1. Preheat the oven to 190°C with both top and bottom heat.
  2. Place the butter in the mixing bowl and leave it at room temperature until softened.
  3. Add the powdered sugar to the mixing bowl and beat it with the butter using a mixer until creamy and the butter becomes lighter in color.
  4. Add the egg yolks and vanilla to the mixing bowl and beat them into the mixture again.
  5. Divide the mixture in the mixing bowl into two portions.
  6. Add cocoa to one portion of the mixture according to the consistency stated in the video.
  7. Add the flour to the first portion in the mixing bowl and begin mixing with a spatula until the dough comes together.
  8. Add the pinch of salt to the mixing bowl while mixing in the flour so that it is distributed through the dough.
  9. Add the sodium bicarbonate to the mixing bowl in a small pinch at the end.
  10. Add the second quantity of flour to the other portion in the mixing bowl and mix it with the spatula until a dough or shapeable consistency forms.
  11. Prepare a piping bag or shaping mold and fill it with the petit four mixture.
  12. Arrange the shaped dough on a baking tray without parchment paper.
  13. Place the baking tray in the oven slightly below the lower rack and leave it for about 10 to 12 minutes.
  14. After about 5 minutes, turn the pieces on the baking tray so they brown evenly on both sides.
  15. Remove the baking tray from the oven and leave the pieces until cool.
  16. Fill the petit fours with jam, melted chocolate, or finely chopped nuts, depending on what is available.
  17. Add a small drop of vegetable oil to the melted chocolate if it is used for the filling.
  18. Stick two petit four pieces together after filling them.
  19. Dip or decorate the top of the petit four with chocolate, then sprinkle with finely chopped nuts if desired.
